ピッツァの人気店[SAVOY]で腕を磨き、独立した沖縄出身の玉城氏の[PST](Pizza studio Tamaki)六本木店で、りえと英大とランチしました。
東麻布店、また最近沖縄恩納村に[PST]by the sea をオープンしました。
ピッツァは[水牛のモッツァレラのマルゲリータ],[マニラーナ]と[ディアボロ]を注文しました、
ピッツァ生地も塩味が抑えられていて、僕好みでした。
素材にもこだわり、全国から選別したものを取り寄せています😊😊😊
デザートの[ティラミス]、[宇治抹茶のパンナコッタ•餡子添え] [紅孔雀卵を使ったフィナンシェ•バニラアイスクリームサンド]もお勧めです。
熱々の鉄鍋で出て来る[ラザニア]が絶品でした🤩🤩🤩

Like many others, we were skeptical about spending one of our Tokyo meals to check whether Tamaki-san’s pizza was worth the hype. And hands down, this is really good pizza with high quality ingredients and a huge respect for the old Neapolitan craft. I’m all about the salt, so this thin, crunchy, bubbly charred and salty crust was pitch perfect to my palate.
As I learned in my years living in Rome, if you want to know if a pizza is good, always order la Margarita first. If it’s really good, there’s hardly anything better in the menu… but the sausage/nduja was also a tasty, meaty hit.
Atmosphere was rather hard to survive with a rude, unaware german guest shouting his lungs out, high volume music and way too high volume chatty crowd. If you are sensitive, bring your earplugs and zoom out :)

Delicious margherita. Was skeptical but pleasantly surprised!
Arrived at 12:10 and was able to get a spot at the bar. By 1pm there was a queue outside.
Organic salad for starter was quite plain - just a simple olive oil dressing. Wouldn’t bother with it if I came again.
Sangria was nice and cold.
Cool to see the chef making the pizza and putting it in the oven.

Pizza was great, ordered the Tamaki. The taste was great but it was just a bit too soft for me. Dough also seemed ever so slightly raw in the centre. It is up there with some of the best pizzas I’ve had, not as good as the best in Brooklyn but still a really good pie. I don’t doubt it’s the best in Tokyo.
Was really hard to get a chance to eat here though, I had to come in person 3 times. First to the Minato location. Tried calling with my hotel for two weeks but they never answered. Came in person another time to Roppongi but it was closed for an event, he was able to reserve me for the next day when I came though.
Pizza was great, just hard to get a reservation at. The onion juice was also surprisingly good, my first time trying it.

Definitely the best pizza I have had in Tokyo. It is worthy of the top pizza rankings. It’s very fresh, the oil has clear flavor. The edges are smokey. It goes together perfectly. It’s very good. I’ll definitely come back. Although, the service was lacking? That’s the only issues with top ranking places. The service is a bit arrogant . Weird. It’s a great pizza place although. I’ll definitely comeback.
