Menya Muichihonten has an abnormal obsession with chicken. The chickens used are limited to domestically produced brand chickens, and not just any ordinary chicken, but only rare and expensive local chickens. They extract the flavor of pedigreed famous chickens such as Hichinoko chicken, Awajishima Roman chicken, Sakurakomachi chicken from Aomori Prefecture, and Shouun Roman chicken from Nara Prefecture to the fullest.
The method of dissecting the whole chicken, crushing it into small pieces, and taking the time to harvest the flavor from the bones was developed by the predecessor of Menya Muichihonten, a shop called "Menya Musashi".
