Phenomenal experience!!! I emailed in advance asking if they could accommodate a vegetarian and they created a whole separate tasting menu for me that was entirely veggie based. My partner had the regular menu and loved it too. A truly unique experience that is worth the price. Each bite is prepared right in front of you with such creativity and care. If you are looking to splurge this is definitely the place to do it. Reservations are necessary as it’s a tiny restaurant. Loved everything about it.

【Eating in Niseko: Sushi Mitsukawa】
Niseko Park Hyatt has many restaurant options;
Among them is "Sushi Mikawa" from Kanazawa.
Sushi Mikawa's main restaurant is in Kanazawa, with one Michelin star.
Google reviews are also good, definitely give it a try.
The Niseko Park Hyatt branch is independent,
Although it is in a hotel, the reservation and checkout systems are separate.
Sushi Mikawa cooks two rounds of dinner every day, and the business is very good.

I learned art at the Kanazawa main store, and surprisingly my English is very good.

I don't usually go to counter sushi restaurants, but since Mr. Mitsukawa took care of me at Park Hyatt Niseko, I've been here three times, once at the main store in Kanazawa and twice here.
I was analyzing why I liked Mr. Mitsugawa here, and I think it's mostly like this.
・Carefully prepared blue fish
Even at so-called counter sushi restaurants, there are many restaurants where the fish is not prepared properly, with the smell of green fish remaining or the vinegar being too strong, but Mr. Mitsukawa handles these issues perfectly. If you want to eat delicious blue fish, I highly recommend it. Depending on the season, blue fish may not be available, so please ask the owner.
・Don't deny soy sauce
This is also a counter sushi restaurant, but there are some restaurants that treat soy sauce with a lot of hostility. However, in Mr. Mitsukawa's case, he is more concerned with how to coordinate the soy sauce with the ingredients. I think everyone has their own preferences in this regard, but I personally like soy sauce, so I agree with Mr. Mitsukawa.
I especially sympathized with the importance they place on soy sauce. If it's a really delicious restaurant, I think soy sauce will be respected as part of the culture.
It's only available on Saturdays, Sundays, and holidays, but you can get a lunch nigiri for around 10,000 yen per person, so why not start there first? Lastly, although it is possible to order separately after the course is over, the tamagoyaki is recommended as a palate cleanser.

Ordered the 15,000yen lunch omakase set meal (18,150yen including tax and service charge)
Includes 3 appetizers, 10 nigiri, a handroll and a bowl of miso soup
When I got to the 9th pass, I skipped the 10th pass and went straight to making hand scrolls.
When I asked the master in English, he explained that there are ten scrolls in total.
I showed him the menu I ordered. It was clearly 10 pieces of sushi + handroll.
Looking at the evidence and the photos of all the fish sushi I presented, the chef had to admit that he did not do as he always did.
There was no compensation, just a verbal apology.
The reason why I can find Shao Yiyi is because the customer next door ordered the same set meal, and the chef next door gave them scallop sushi; and we never got scallop sushi.
Finally, I was given the always insincere red-eye snapper, which was also very tasteless.
Even the fish in the tuna hand roll couldn't cover the roll.
Overall, they are suspected of cheating the Chinese people. The eight people in front of the board are all from mainland China and Hong Kong, China.
The service feels very poor. It is basically what we should do if we make such a low-level mistake and give guests a discount or a dessert or something.
