Owner Kawashiri of the Ramen Fort Research Institute previously ran a pork bone ramen shop named "Maruryu." In search of new challenges, he opened the current restaurant in 2019, focusing on creating innovative ramen using shellfish. This effort resulted in the signature dish, "Shellfish Ramen."
