The Charm of the Hidden Gem Ramen Shop in Oita City

"Ramen You Ichibantei" nestled in a residential area of Oita City, Oita Prefecture, is a hidden gem ramen shop adored by the locals. The handmade flavors managed solely by the owner have created numerous regular customers.

Exquisite Craftsmanship in a Bowl

The true appeal of this shop lies in its tonkotsu ramen soup: a light yet rich flavor that offers depth of umami without getting dull. The perfect harmony with ultra-thin noodles is also a highlight.

Moreover, the tender and juicy chashu, meticulously prepared to eliminate any unwanted odor, and the self-service pickled mustard greens have both received favorable reviews.

Interaction with the Friendly Owner

Despite its small space, the shop provides both counter and table seating. The sight of the owner tirelessly working alone exudes the passion and sincerity of a culinary artisan.

Although the owner may give off a mischievous vibe at first glance, the friendly and attentive service has won over many customers. Perhaps, this amiable nature is also one of the shop's charms.

A Trial to Discover Authenticity

Because of its location within a residential area, first-time visitors may struggle to find the shop. Furthermore, the limited parking spaces require caution for those arriving by car.

However, if the waiting time and effort to get there are viewed as a "premium" for savoring truly delicious ramen, it could be an enjoyable experience. The joy of finally finding it will be especially rewarding.

Why not visit this local popular shop and experience the homemade flavors and warmth of the local community? A hidden gem space where you can escape the hustle and bustle of the city awaits you.

I visited you at lunch. There are about 2 parking spaces in front of the store, but please check with the store if there are other parking spaces available. I think it may take some time because the owner is running the shop by himself. In my experience, I didn't have to wait that long! The ramen was a polite and gentle ramen just like the owner. The chashu is delicious! There are also small rice dishes, so be sure to check them out! The inside of the store is not as small as it looks, there are table seats and counter seats!

Yang ramen (900 yen) and beer (600 yen). It's also a feast for the eyes with so many ingredients. The chashu was also soft, moist and delicious. The soup is neither too heavy nor too salty, so you can drink it all. Since it was a one-off operation, the owner seemed to be busy all the time. However, they provide courteous customer service.

A restaurant with delicious simple soup that you will never get tired of and carefully prepared chashu pork. The self-service Karashi Takana was also delicious.

First visit. Please note that parking is limited. For ramen, I ordered Yang ramen. The soup is delicious. The char siu is also good. There is a repeat.

Visited with my wife for lunch on Sunday. Located in a residential area, it is very difficult to find. I took a quick look at the parking lot, and at first I was hesitant to park because it was a parking lot that looked like a normal house garage. As mentioned in other reviews, this place is run by the owner alone. The inside of the store is also small. The wait time is quite long because I am the only one doing everything from cooking to finishing the cooking. When visiting the store, we recommend that you be prepared to wait for a long time. As for the taste, it's delicious! Although the pork bone is light, it has a good richness, and the noodles are extremely thin and well-balanced. Also, although the chashu has a slightly sweet taste, it doesn't have any odor and is delicious! The optional topping of mustard greens was also quite good. The shop owner may look like a mischievous old man, but he seemed to be a really nice person (^o^) However, he was busy all the time by himself, so it seemed very difficult (;^_^) I want to repeat it on weekdays.
