Whenever I go to Akita City, I always eat at Yamaokaya. Influenced by the man known as Manpuku Sandayu, he began to enjoy rice wrapped in green onions. No matter how many times I go, normal soy sauce + half rice + green onion + seaweed is my standard. I feel happy every time. I would like to try the limited menu in the future.

I've been to the Hirosaki store several times. This was my first time at the Akita Niida store, and since it was around lunch time, there was a wait of about 7 groups, but I was able to get a seat surprisingly quickly. I ate the spicy green onion miso, but I forgot to take a photo, so this is just what it looked like after I went outside.

I especially enjoyed the special miso green onions, white hair green onions, green onions, eggs, and rice. Top rice with white onion, egg, and koro chashu in an original bowl. This time it was consistently delicious.

Everyone has different tastes, so it may not be for everyone, but I'm a big fan! You can check the intensity of the flavor, the amount of fat, and the hardness of the noodles and choose them when you hand your ticket to the staff. There are four levels of noodle hardness: balikata, hard, normal, and soft. I always order salt ramen with rock nori topping (noodles are hard), and when I get it, I get lots of garlic and pepper!

I ordered the special miso green onion char siu - the firmness of the noodles, the depth of the flavor, and the amount of oil were all normal. The noodles are thick and straight. I'm sure everyone has their own preferences, but they were a little saltier than I liked. I guess it's for people who want to eat heartily as most of the customers are male.
